For the tofu patty:
Cut tofu brick in half, then with hand or dull end of a large chefs knife, crush the tofu into paste life texture on top of cheese cloth or durable paper towel. Once crushed, wrap the tofu in the cloth and ring the water out of the tofu over a sink. Unwrap the crushed tofu and place it into a medium sized mixing bowl. Set a side.
Cut and dice the green onion on a cutting board, then place into mixing bowl with tofu in it. Then mince and/or dice the onion and place into the mixing bowl with tofu and green onions. Repeat these steps with fresh garlic and carrots.
Add rice flour to in a separate bowl or cup then add salt and pepper to taste (however much you prefer). Combine the dry ingredients then add them to the mixing bowl with the tofu and vegetables. For best results, combine everything together by crushing with your clean hands. Once mixed, shape the tofu mixture into patty shapes that are 1.5 to 2 inches thick.
Add olive oil to a frying pan and heat to medium-high. Once pan is hot, place patty’s and fry. Flip the patty’s after 3-5 minutes of frying or until surface becomes golden brown. Once both sides are cooked, remove from pan and set aside on fresh paper towel to absorb excess oil from the pan.

Add olive oil to a sauce pan and heat to medium-high. Once heated add sliced onions and sauté until golden. Then add pork cutlet sauce or the ingredients for the vegan alternative. then add the remaining ingredients and stir till bubbly. Once bubbly, remove from heat and add the sauce overtop of the patties on a plate.
